Gingerbread Cookies

For the dough

1 tsp ground ginger

1 tsp mixed spice

1 tsp nutmeg

2 cups spelt flour

1/2 tsp bicarbonate of soda

50g melted butter
-
40ml almond milk
-
30g brown sugar

Preheat oven to 200’c
-
Combine the spices, flour, bicarbonate of soda together

Mix together the butter, milk and sugar in a separate bowl

Combine both sets of bowl together and mix thoroughly, if the mixture seems too dry then add more milk and if the mixture is too wet then add more flour

Roll into a ball and refrigerate for 20-30minutes

Roll the dough into approximately 2cm thick and cut shapes of choice using a cookie cutter

Bake for 7-9minutes or until golden brown

Leave to cool and decorate using icing pens of your choice.
These were definitely a delicious treat for my adorable nephew Elias who couldn’t get enough of his favourite Christmas snack.
